Red Pepper Hummus

Roasted Red Pepper Hummus
Recipe type: Greek Appetizer

Serves: 3-5
This hummus is a twist on the classic and is very good. It's simple and goes great with breads, cheeses, and vegetables
  • 1-2 clove garlic – pressed
  • ½ cup red peppers, diced
  • 19oz can garbanzo beans (keep some liquid)
  • 4 tablespoons lemon juice
  • 2 tablespoons tahini
  • 1 teaspoon salt
  • 2 tablespoons olive oil
  • black pepper to taste
  1. Drain garbanzo beans leaving a little juice to use
  2. In a mixer, combined everything, including liquid, except peppers.
  3. Mix until smooth paste
  4. Add red peppers and pulsate for a few seconds
  5. Transfer to bowl - salt to taste
  6. Serve!
Serve with either warm bread, cheeses, olives, vegetables of everything!
