Herb and Feta Mashed Potatoes

  • 1 lb baby red potatoes
  • 2 tbsp butter (salted)
  • ½ tsp dill
  • ½ tsp oregano
  • ½ cup milk (1%)
  • ¼ cup feta cheese
  • Salt and Pepper to taste
  1. Wash and halve potatoes.
  2. Boil 4-6 cups of salted water over high heat. Add potatoes.
  3. Bring heat to medium and cook potatoes for 20 minutes or until soft.
  4. Strain potatoes and place back in pot.
  5. Add butter, dill, oregano, milk, and salt and pepper.
  6. Mash until well mixed. Stir in feta.
  7. Add to plate and serve!
