Greek Christmas Bread

  • 1 packet of yeast (ΒΌ oz or 7 grams), activated if needed
  • ¼ cup warm water
  • ½ teaspoon sugar
  • ¼ teaspoon Sea salt
  • ¼ cup olive oil
  • 1 tablespoon brandy
  • ¾ cup warm milk
  • ½ teaspoon vanilla (substitution for mastic)
  • 3 eggs ( 1 used for egg wash)
  • ½ cup (1 stick) butter, melted
  • ½ teaspoon lemon zest
  • ½ teaspoon orange zest
  • 5 cups + ¼ cup flour (plus more for surface)
  • ½ cup almonds, slivered
  • ¼ cup raisins
  1. In a large bowl add: yeast, water, sugar, Sea salt, oil, brandy, milk, vanilla, 2 eggs, butter, lemon zest, and orange zest - mix well.
  2. Next add 1 cup flour and mix well.
  3. Continue to add flour one cup at a time, mixing well.
  4. After all flour is added, mix in almonds and raisins.
  5. Knead dough for about 10 minutes on well-floured surface. Dough should be elastic and not sticky - add more flour as needed. If too dry add some water.
  6. Place dough in oiled bowl and cover. Allow to rise double in size, about 1 hour.
  7. Remove dough from bowl and knead for 30 seconds on floured surface.
  8. Break into 2 equal parts and place on baking sheet lined with parchment paper.
  9. Shape each dough piece into a circle.
  10. Break off a small piece of dough from each piece to create your design(s) if desired.
  11. Sit and let rise for another 30 minutes.
  12. Preheat oven to 350F.
  13. Use remaining egg and create egg wash (break egg in bowl, add splash of water, and mix well).
  14. Brush egg wash over bread.
  15. Place in oven and bake for 35-40 minutes or until golden brown.
  16. Remove and let cool.
  17. Serve!
