Vasilopita - Greek New Year's Bread!

Ingredients
  • 3 cups flour
  • ½ teaspoon baking soda
  • 1 cup (2 sticks) butter, melted
  • 1 cup milk
  • ¾ cup sugar
  • ½ teaspoon brandy
  • ½ teaspoon vanilla
  • 1 teaspoon fresh lemon juice
  • 3 eggs
  • 1 coin, wrapped in aluminium
  • Topping
  • ½ cup chopped pistachios
  • 1 teaspoon sugar
Instructions
  1. In large bowl, mix flour and baking soda.
  2. Add melted butter and milk- mix.
  3. Next, add sugar, brandy, vanilla, and lemon juice - mix well.
  4. Add eggs, one at a time - mixing well.
  5. Pour into greased 10 inch round pan.
  6. Take coin and hide somewhere in bread mix
  7. Place in preheated oven at 350F for 25 min.
  8. While baking, prepare topping
  9. Combined in bowl chopped pistachios and sugar, mix well.
  10. After 25 min, remove bread from oven and sprinkle with pistachio and sugar mixture.
  11. Place back in oven for additional 20 min or until golden brown and cooked.
  12. Remove and let cool.
  13. Serve!
