A simple and great tasting Greek inspired breakfast wrap

Serves: 2-3
  • 6-7 egg whites, depending on size
  • 14 oz package of turkey sausage
  • ½ cup kalamata olives, chopped
  • 2 peppers, diced and seeds removed (we used Anaheim peppers, you can use your favorite).
  • ½ cup crumbled feta
  • 2-3 Multigrain tortillas depending on size of each warp
  1. Dice up peppers and olives.
  2. In an oiled pan over medium heat add peppers and olives and sauté for a few minutes.
  3. Next, add turkey and cook until it is done.
  4. While doing this, add egg whites to bowl and whisk with a fork.
  5. When turkey is cooked, add egg whites and stir occasionally.
  6. Cook until eggs are done, about 2-4 minutes.
  7. Remove from heat and place half of mixture (or desired amount) on warm tortilla. Sprinkle with feta, wrap, cut in half and put on plate.
  8. Serve!
We suggest warming up the tortillas.
