A healthy zucchini dish. Zucchini Gratin with Greek yogurt

  • 2 large zucchinis/squash, sliced
  • 1¼ cup full fat greek yogurt*
  • 4 eggs
  • ⅔ cup feta, plus extra for topping
  • 2 garlic cloves, pressed
  • Salt and peper
  1. Bring some salted water to a boil in a sauce pan.
  2. Add sliced zucchinis, and cook for 3 minutes.
  3. Remove, drain, and run cold water over them to stop them from cooking.
  4. Arrange them in oven safe dish.
  5. In mixing bowl, combine: greek yogurt, eggs, feta, and garlic - mix well.
  6. Pour mixture over zucchini slices, spread out evenly.
  7. Top with some extra feta (optional)
  8. Place in preheated oven at 325F for 45 minutes, or until zucchini is soft.
  9. Remove and serve hot.
*Must be full fat. Using 2% or fat free may enable the yogurt to break down while baking and not turn out correctly.
