Fried cheese and herb mixed balls from Crete

  • 15 ounces (425g) of ricotta cheese
  • 1 egg
  • 4 tablespoons of flour + extra for rolling
  • 1 teaspoon oregano
  • 2 tablespoons dried parsley
  • ½ teaspoon thyme
  • salt
  • pepper
  • ⅔ cup oil, for frying
  1. In a large bowl, combine all listed ingredients (except oil), mix well.
  2. Place in refrigerator to set, about 30-45 minutes.
  3. Add oil to pan and heat over medium heat.
  4. Once oil is hot, remove cheese mixture from refrigerator.
  5. Add some flour to a plate for easy rolling.
  6. Take a golfball size amount of cheese mixture and place it in the flour, roll it around coating and forming a ball.
  7. Shake off excess and place in pan.
  8. Fry for 3-4 minutes on each side, or until golden brown.
  9. Remove and place on paper towel.
  10. Repeat until all cheese is used.
  11. Serve warm
