In a large bowl, combine: pork, olive oil, lemon juice, oregano, thyme, garlic, salt, and pepper - mix well.
Cover and place in refrigerator for at least 1hr to marinate.
Remove, and skew pork, onions, and bell peppers.
Pour any remaining marinade over entire skewer.
Place on grill for 10-15, until thoroughly cooked. Turning twice.
Remove, and serve with pita and tzatziki!
