Ingredients

pound
green beans
ends cut and cut into thirds (or bite size pieces)

russet potatoes
skin removed and cut into small chunks

can of petite/diced tomatoes
14.5
ounce
can of water*

onion
diced
1/2
teaspoon
dried oregano
1
teaspoon
fresh dill
1
tablespoon
fresh parsley

garlic cloves
pressed

tablespoons
tomato paste

cup
feta cheese crumbles
more the better
1/4
cup
Olive Oil
Salt
Pepper
Instructions
Heat olive oil in pan over medium heat.
Add diced onion and cook until translucent, about 5 minutes.
Add pressed garlic, and cook for another 3-4 minutes.
Add oregano, dill, parsley, salt, and pepper, mix well.
Add potatoes, spread evenly.
Add green beans, can of tomatoes, tomato paste, and can of water
Taste and add more salt/pepper if necessary (or whatever you think is needed).
Bring to boil.
Cover, reduce heat, and simmer for 45 minutes or until potatoes and beans are soft.
Remove from heat, plate, sprinkle feta over top.
Serve!
Notes
* you my need a bit more water as you want to cover the potatoes.
