We’ve recently taken on some new projects and that has thrown our day to day for a loop – we are desperately trying to figure out a new routine. It’s hard to learn new things while keeping up your very in sync regimen that is predictable and nice. We know we aren’t the ones who have invented change but we do love it so. It thrills us but with it comes brand new ways of dealing with life, each other, and our most beloved current activities.
Last month we were still in this daze of figuring out our new schedule but decided to pause everything that we had going on and just cook. And cook! and create and then cook some more. We have thirteen new recipes and counting that we are going to be sharing with you. So much fun and this time they aren’t all food but drinks as well! Avocado And Feta Toast
Today’s recipe is actually something that we’ve incorporated into our breakfast (and also as an appetizer as well!) routine for a few reasons: it’s healthy, it’s easy! It’s avocado toast! Doesn’t sound revolutionary, I know. But that’s the point. This is just what you intended when you wanted a quick morning meal whether you are at home with the kids or at work and busy, busy! All you need is a toaster or toaster oven to get your multigrain bread nice and crispy and then your avocado, feta, and tomatoes do the rest of the work.
Mashing up your avo is quick and only requires some salt, lemon, and paprika for a little kick. However, you can also add red chili flakes, chili powder, or garlic salt. Whatever you want to give that mixture a kick would work well! Spread that quick and easy mixture over your crusty bread and sprinkle with a little feta and some cherry tomatoes. Seriously, that’s it.
How you end up benefiting from the Mediterranean quick fix is that you will stay full all morning. Or at least, you should. The fat from the avocado and feta plus the grains and vitamins from your bread and tomatoes are just what your body ordered to keep moving all the way until lunch. On some weekends, I have even served it with one fried egg for a little something extra. It seriously is divine. Avocado and Feta Toast
Ingredients
- 3 medium slices whole grain bread or use your favorite
- 1 ripe avocado
- ¼ tsp paprika
- salt
- pepper
- juice from ½ small lemon
- 2 tbsp feta cheese
- 4 cherry tomatoes cut in halves
Instructions
- Brown bread to your liking in toaster oven/toaster.
- While baking the bread, add the avocado, paprika, salt, pepper, and lemon juice in a small bowl, and mash.
- When toast is ready, spread avocado mixture over each each slice.
- Top with feta and cherry tomatoes.
- Enjoy your Avocado And Feta Toast!
