A traditional Cypriot dish of pork cooked and marinated overnight in red wine.

  • about 2.5lbs pork cut into cubes (lean is healthier)
  • 5-6 ounces of Greek red wine
  • 2 whole sticks of cinnamon
  • 1 teaspoon pepper
  • 2 tablespoons of crushed coriander (a staple in this dish)
  • 2 pinches of salt (to preference)
  • 5-6 tablespoons Greek olive oil
  1. In a large bowl, combine pork, wine, cinnamon sticks, coriander, and pepper.
  2. Mix and make sure pork is well coated in mixture.
  3. Cover and place in refrigerator to marinate for 1 hour (Or overnight for best results).
  4. Heat oil in pan and add pork (don't throw away marinade!).
  5. Cook until brown.
  6. Once brown, add marinade and salt.
  7. Cover and cook for about 30 minutes.
  8. It's done when meat is cooked and marinade becomes thick.
  9. Serve.
