Stuffed Cucumbers With Feta and Greek Yogurt

  • 2 cucumbers, peeled and sliced lengthwise
  • ¼ cup crumbled feta, plus extra for topping
  • 1 tablespoon greek yogurt
  • ¼ teaspoon dill
  • ½ lemon, juiced
  1. Remove seeds/filling from the center of each cucumber. Slice and set aside.
  2. Take half of the filling you removed and dice, place in mixing bowl.
  3. Combine feta, greek yogurt, dill and lemon juice in bowl, mix well.
  4. Take Greek yogurt mixture and spoon into cucumber slices, spreading evenly.
  5. Top with some crumbled feta (optional)
  6. Serve as is or cut cucumber slices into thirds and serve.
Feel free to add more Greek yogurt to make more/thicker filling. You can also cut them into thirds and serve.
